MOAK Pancakes De Pijp — Ferdinand Bolstraat 11, Amsterdam

Brunch in De Pijp Amsterdam — the MOAK way

De Pijp wakes up slow. Bakery shutters lift, espresso machines hiss, the first stallholders roll their carts onto the Albert Cuyp. By half past eight the smell of fresh bread is already drifting down Ferdinand Bolstraat — and right there, one block from the market, our door is open.

Welcome to MOAK Pancakes De Pijp.

Where you'll find us

We're at Ferdinand Bolstraat 11, a two-minute walk from the Albert Cuyp Market and four minutes from the Heineken Experience. From De Pijp's tram stops you can pretty much smell the maple syrup. Tram 24 drops you on Marie Heinekenplein; the metro at De Pijp station puts you ten minutes away on foot through the quiet side of the neighbourhood.

Sit by the window and you'll see the Pijp doing what the Pijp does — bikes weaving past, market regulars carrying flowers, weekend visitors map in hand. It's one of the best brunch corners in Amsterdam, and we built the room to match.

What we serve

Every pancake at MOAK is 100% sugar-free in the batter. Sweetness comes from real, organic Canadian maple syrup poured at the table, or from the fresh fruit and chocolate on top. Nothing else hides in the mix.

A quick tour of the menu:

  • Sweet stacks like the Wu Tang Sweetz Special, our classic sweet pancake built for sharing
  • Halal-tagged dishes including The NWA, The Tupac, and The Message — savoury plates with eggs, Turkish sucuk and bread, made on a kitchen that's set up for halal-tagged orders
  • Vegan picks like The Blue Magic and The Blue Magic Deluxe, plant-based stacks with the same MOAK character
  • The Golddigger — our signature celebration plate with 22-karat gold leaf, Ruby chocolate, and a glass of Luc Belaire Rosé, served on a Versace plate (one per hour, walk in to claim yours)
  • Fresh slow juices, single-origin espresso drinks, and sourdough toast with eggs if you're more of a savoury-morning person

We don't pretend to be a guide to every brunch spot in De Pijp. We're here to feed you well, send you back into your day full, and have a good time while we do it.

The vibe

There's hip-hop on the speakers — Wu Tang, Tupac, the playlist that gave the menu its names. The room is loud in the best way: families sharing the Wu Tang Sweetz Special, friends comparing whether The Tupac or The NWA is the better savoury order, solo travellers writing postcards over slow juice.

We call it gulle gastvrijheid — generous hospitality. It means more pancake than you expected, a server who's actually happy to see you, and a corner of De Pijp that feels like home from the moment you sit down.

A few practical things

  • Open every day from 08:30 to 15:30
  • Walk-in only — no bookings, no waiting list, no app
  • Card payments (no cash, no problem)
  • Pet-friendly — your dog is welcome at most tables, just ask
  • Wi-Fi is on the house if you want to plan the rest of your day from the table

Weekends get busy from around 10:00. If you want a window seat, aim for early — we open the doors at 08:30 and the first half hour is the calm before the rush.

Pairing your day in De Pijp

Brunch first, then the rest of De Pijp opens up. From Ferdinand Bolstraat 11 you can:

  • Walk three minutes to the Albert Cuyp Market for stroopwafels, flowers, vintage and everything in between
  • Reach the Heineken Experience in four minutes for the brewery tour
  • Cycle ten minutes to Sarphatipark for an after-brunch nap in the grass
  • Hop on tram 24 and be at the Rijksmuseum in twelve minutes flat

Or come back later. We open at 08:30 every day — there's always tomorrow's stack to look forward to.

Looking for MOAK elsewhere in Amsterdam — or in Utrecht?

We've got two more spots, both serving the same menu and the same energy:

Three locations, one menu, daily 08:30–15:30 across the board.

See you in De Pijp

MOAK Pancakes De Pijp lives at the corner of one of Amsterdam's most loved neighbourhoods, and we've been waking it up with sugar-free pancakes, real maple, and Wu Tang on the speakers since we moved in. Brunch in De Pijp the MOAK way means: walk in, take a seat, order something with a name you'll remember, and let the morning happen around you.

We'll keep the maple syrup warm.
