This is the matcha we whisk every day at Matcha Atelier, our Japanese matcha stand inside MOAK Pancakes City Center in Amsterdam.

  • Otsuka Seicha (大塚製茶), a family tea house in Kakegawa, Shizuoka, Japan, founded in 1869
  • Ceremonial-grade Japanese matcha from Shizuoka, Japan's leading tea region*
  • 50 g resealable bag, around 25 bowls of usucha or lattes (2 g each)
  • Selected by our founder Saki, who grew up in Shizuoka among the tea fields

*"Ceremonial grade" is not an official grade in Japan; it is the international name for the everyday drinking matcha that Japanese households whisk at home. This matcha is not certified organic.

How Saki makes it

Usucha (pure): sift 2 g of matcha into a bowl, add 70 ml of water at about 80 °C and whisk briskly in an M-shape with a bamboo chasen until a fine foam forms.

Matcha latte: whisk 2–3 g of matcha with 40 ml of water at about 80 °C, then pour over 200 ml of warm or iced milk. Oat milk works beautifully.

Strawberry matcha: spoon strawberry purée into a glass, add ice and milk, then pour the whisked matcha on top. Our best-seller at the stand.

Store cool, dry and sealed. Once opened, keep it in the fridge and use it within a few weeks for the brightest colour and flavour.
